Soft Gluten Free Blondies

These are my go-to gluten free blondie bars — soft, buttery, and so simple. I make these for Under the Rowan Tree and they’re always a favorite.

Ingredients

    •    Butter

    •    Brown sugar

    •    Granulated sugar

    •    Eggs

    •    Vanilla extract

    •    Gluten free 1:1 flour (I use King Arthur)

    •    Almond flour

    •    Baking powder

    •    Salt

    •    Chocolate chips

    •    Seasonal mix-ins (like Cadbury eggs or rainbow sprinkles)

Instructions

    1    Preheat oven to 350°

    2    Mix butter and sugars until combined

    3    Add eggs and vanilla, mix until smooth

    4    Stir in flours, baking powder, and salt

    5    Fold in chocolate chips and seasonal mix-ins

    6    Spread into a prepared pan

    7    Bake until edges are set and center is soft

    8    Let cool before cutting

Notes

    •    Do not overbake — this keeps them soft

    •    Let them cool completely before cutting

    •    I like to cut mine into larger bars
