Easy Toddler Mini Pizzas 🍕

These little mini pizzas are one of my favorite easy toddler lunches because they are so simple, so good, and my toddler can help me make them.

I use small street corn tortillas as the base, then add tomato sauce, cheese, and whatever toppings we are in the mood for. Sometimes I add sliced chicken sausage, but pepperoni would be so good too. I finish them with a little basil on top and pop them under the broiler until the cheese is melted and everything is warm.

Talk about a ten minute meal. These are fun to make, easy to customize, and actually delicious enough that I usually want one too.

What You Need

Street corn tortillas

Tomato sauce

Shredded cheese

Chicken sausage, sliced

Pepperoni, optional

Veggies, optional

Fresh basil

How I Make Them

  1. Place your corn tortillas on a baking sheet.
  2. Spread a little tomato sauce over each tortilla.
  3. Sprinkle cheese over the top.
  4. Add sliced chicken sausage, pepperoni, or leave them plain with just cheese.
  5. Place them in the oven under the broiler until the cheese is melted and the edges of the tortillas are lightly toasted. Keep an eye on them because they cook quickly under the broiler.
  6. Finish with a little fresh basil on top.

Let Your Toddler Help 👩‍🍳

Sometimes I prep everything ahead of time in little prep cups with the sauce, cheese, and toppings all ready to go.

Then I pull a chair up to the counter so my toddler is at counter level and can assemble their own little pizza exactly how they like it.

They can spread the sauce, sprinkle on the cheese, and choose their own toppings. It turns lunch into a little activity and gives them a chance to be part of making their own meal.

I love recipes like this because they are simple, quick, and easy to change depending on what you already have in the fridge. Chicken sausage, pepperoni, extra cheese, or even just sauce and cheese all work.

The Little Prep Cups

The little prep cups make this so much easier, especially when your toddler is helping. I like to put each ingredient in its own cup so everything is ready to grab and they can build their pizza without a big mess.
